It is a cold, chill to the bone, kind-of day here in Utah. I am in need of something that warms my soul. It needs to have a little heat as well. My BFF, Melissa, has a killer White Chicken Chili recipe that I use all the time in the winter, and it is like a warm hug that keeps on giving! The perfect side to this dish is Shirley J's wonderful corn muffins. Just add water and Voila! Or add a little somethin'-somethin' and give it some HEAT!
I hope you enjoy these 2 recipes as much as I do.
Simple and Foolproof.
White Chicken Chili
1 lb. chicken, cubed
1 med. onion, chopped
1 1/2 tsp. garlic powder
1 T. vegetable oil
Saute
then add:
2 cans great northern beans, rinsed and drained
2 cans of whole kernel corn, rinsed
1 can chicken broth (I use 1 tsp. of Shirley J Chicken Bouillon to 1 cup water)
1 can green chilies, diced
1 tsp. salt
1 tsp. cumin
1 tsp. oregano
1/2 tsp. pepper
1/4 tsp. cayenne pepper (I use 1/8th tsp. for the kiddos)
*Reduce heat and simmer uncovered for 30 minutes. Remove from heat and add 1 c. of sour cream, 1/2 cup of whipping cream, and let sit for 5 minutes. OR, what I like to do to cut out my calories and my expense, I use SHIRLEY j Universal Sauce. I use 1 cup of Universal Sauce to 2 1/2 cups of water and heat on stove for 4 minutes. (only 135 calories per cup, and if you are on WW, that is only 3 points!) That is something to SCREAM ABOUT!
This meal is fabulous with corn bread or buttermilk biscuits!
Cheesy Jalapeno Corn Bread/Muffins
Ingredients:
1 ½ cups Shirley J Corn Muffin/Bread Mix
¾ cup water
1/3 cup frozen corn kernels or canned
1 cup grated Cheddar cheese
¼ cup chopped canned jalapenos
Directions:
Combine all ingredients in a mixing bowl and mix for 45 seconds or until all ingredients are combined. Fill greased or paper lined muffin tins halfway or a greased 9X9 baking pan. Cook muffins for 14-16 minutes at 375. Cook 9X9 bread pan for 18-24 minutes at 375. Remove form oven and glaze the top with butter.
