SPINACH PINWHEELS

I've made these amazing pinwheels several times, and I have to say, they are fantastic!  I thought I'd post them since the holidays are coming up, and they are a perfect appetizer for any party!  You will not be disappointed:)  Leave me a comment and tell me what you think!

1 full batch Shirley J Honey White Bread (see package directions)
1 c. feta cheese crumbles
2  Roma tomatoes (thinly sliced)
4 c. fresh baby spinach
1 c. grated mozzarella
2 T Shirley J Pizza/Pasta Seasoning
3 T oil 


 
 

Directions:

Follow the directions on the bag to make a full batch of Shirley J Honey White Bread. After the dough has doubled its original size cut in half. Roll each half out to a sheet about 25 inches by10 inches in size. Brush first one with olive oil and layer on half of the tomatoes, half of the cheese and half of the spinach. Sprinkle 1T of the Pizza and Pasta seasoning on top and roll the dough over its self starting from one of the 25 inch sides, roll the dough until it makes a 25 inch tube; cut it into 1 1/2 – 2 inch sections. place on a greased or parchment lined sheet pan flat side up and bake at 375 degrees F. for 15 minutes or until the pinwheels start to brown. Repeat the process for the second half of the dough.

Key Lime Dessert Squares

KEY LIME DESSERT SQUARES


I have to say, I was so excited to make these after tasting them at Shirley J while I was in Utah for my "me" time. I am not a huge Lime or tart person, but these are fabulous. They have a smooth texture, an awesome crust, and they are so quick and easy to make.


Key Lime Dessert Squares

Crust:


1-12 oz. package, or 3 c. of Shirley J Universal Biscuit and Baking Mix
1 1/2 cube or 3/4 c. butter, softened




Filling:


2-5 oz. packets or 1 1/2 c. Shirley J Universal Dessert Creme
1 1/2 c. water
1- 12oz. can Frozen limeade concentrate (thawed)
2 drops Green food coloring


Directions:


Preheat oven to 350 degrees. Grease the bottom of a 9x13 baking dish and set aside. Combine Universal Biscuit and Baking Mix and butter. Mix on medium speed until combined to a fine crumb. Pour into baking dish and press enevly into bottom. Bake at 350 degrees for 15-20 minutes, or until edges begin to turn golden brown. Set crust aside to cool.


In a mixing bowl, combine liquids and food coloring. Begin mixing and add Universal Dessert Creme to the liquids. Mix on medium speed for two minutes and immediately pour onto cooled crust. For best results, refrigerate for 30 minutes. Garnish with sweetened whipped cream and lime wedges.

HAWAIIN HAYSTACKS, so yummy- I almost forgot to post!

Honestly, I don't know what I was thinking, okay- I wasn't! Laying in bed, and I knew there was something I forgot to do! We ate dinner around 7 tonight, and it was delish! I made Hawaiin Haystacks, one of the kids' favorites! I always love this meal, it is one you can't mess up!


HAWAIIN HAYSTACKS
(Shirley J style)

Chicken:

3 Chicken Breasts
1 tsp. Olive Oil

*Cook on low for 4-5 hours in crockpot.

Chicken Cream Sauce:

1 1/2 cups of Shirley J Universal Sauce
6 cups Water
1 tsp. chicken bouillon (to taste)

*Whisk together, bring to a boil, and let simmer for 4 minutes.

*Shred or dice chicken with a fork, in your crockpot- leave the drippings in! Add Cream Sauce right into crock pot and stir.

Rice: follow directions! (I double my rice every time I make it, and then I take the left over rice and freeze it- makes crazy busy days into stress free nights- take out night before or morning of!)

Toppings:

Grated Cheese
Green Onions
Celery, sliced
Grape tomatoes
Pineapple
Coconut
Slivered or chopped Almonds
Chinese Noodles


There you have it! I try to pre-slice everything in the morning and put all ingredients in a veggie tray to keep them seperate- this works for me! I take my rice out to thaw out the morning of. All I have to do is throw the chicken in the crockpot, make the cream sauce, steam the rice in the freezer bag for a few minutes in the micro, whip out my tray, and we are GOOD to go! Pretty easy and a wonderful meal that we all enjoy!

Chocolate Peppermint Cookies

Chocolate Peppermint Cookies


4 c Shirley J Universal Cookie Mix (pack loosely)
1 c Cocoa Powder
1 c Milk Chocolate Chips
¾ c water
5 Peppermint candy canes (crushed into pieces)

Directions:

Combine Shirley J Universal Cookie Mix, cocoa, chocolate chips and water together, the mix will appear dry. Shape cookies into a round ball. I use a cookie scooper that my fabulous sister inlaw gave me years ago- can't live without it! Then, flatten slightly and sprinkle with the candy cane pieces. My kids can not stand peppermint, so I did Strawberry flavored candy canes for them and peppermint for me! Bake at 375 for about 8-10 minutes. I underbake everything, so I only cooked for 8 minutes and let them sit for a minute outside of the oven on my baking stone.

I love these cookies, chocolate and peppermint- my favorite combo!

Spaghetti Sauce

I did NOT cook today, we had church and family things going on, that I didn't need or even have to! But, I've promised 365 days of recipes and I will follow through! Here you go, and enjoy!

You may think this is short and sweet, but I can honestly say, I make this ALL THE TIME, because we love, love, love this sauce!

SPAGHETTI SAUCE

5 cans tomatoe sauce (I use the most inexpensive brand)
1 garlic bulb
1 tsp. olive oil
1/2 lb. hamburger or sausage, cooked
3-4 tsp. PIZZA/PASTA SEASONING (Shirley J)

Saute garlic in olive oil. Add 5 cans of tomatoe sauce with 1/4 c. water. Add Pizza/Pasta seasoning and ground meat. Simmer for 20 minutes, and you are done!

*We love this over spaghetti, or any kind of cooked pasta.
*You can also just add 1/2-1 tsp. of seasoning to 1 can of tomatoe sauce and it makes an AWESOME breadstick dip or pizza sauce!
